So Cupcake

It isn’t just the unique flavors and fun decorations that make So Cupcake a great place to visit. Patrons who go to the bakery located at 3939 South Highland Drive are helping make a little girl’s dream come true. Born with cerebral palsy, 9-year-old Celina Wollsieffer is the inspiration behind the So Cupcake concept.

A Food Network enthusiast, Celina was awarded a trip from the Make-A-Wish Foundation that allowed her to travel to New York and meet her favorite chef, Emeril Lagasse. Baking brought the family closer, and after many culinary experiments of their own, Celina and her mom Natalie Jensen created their own line of gourmet cupcakes and began offering them to friends and family. The demand was so great they soon opened So Cupcake amid great fanfare and community support.

“To have an idea and a dream and have it work and have such an overwhelming response is such a good feeling,” says Natalie who owns the shop with her husband Kevin. “We opened in February and it’s been amazing. More than I ever expected.”

Using only the freshest ingredients, including  real butter, rich coca and pure extracts, the original recipes are great for a treat, a birthday or even a wedding. So Cupcake will cater any event or host birthday parties for up to 12 children for only $7 per person. Each child receives a drink, a party surprise, a tour of the bakery and a cupcake they can frost and decorate themselves.

Cupcakes like Hanky Panky Red Velvet, Muy Muy Mocha, So Goldie Peanut Butter and Yummy-licious Brownie have made So Cupcake a fun place to stop for a treat. Celina and Natalie are constantly creating new recipes and have integrated German chocolate, lemon meringue, carrot cake and mango/pineapple into the latest cupcake concoctions.

“We have at least 20 varieties, if not more,” Natalie says. “We keep trying to use new flavors. The Oreo cupcake is one of Celina’s favorites.”

Patrons enjoy stopping by So Cupcake to meet Celina and enjoy a truly delicious snack. Natalie believes Celina’s enthusiasm is contagious, persuading patrons to return again and again.

“Our store’s so full of happiness and life,” she says. “We want people to come in our store and feel welcome.

The Jensens are grateful for the encouragement they’ve received from friends, family, Holladay leaders and business owners. They’re happy to give something positive back to the area. “All of the small business owners in Holladay have been so supportive,” Natalie says. “They constantly send customers to us. We’re so amazingly grateful.”
